Brownies... with a twist

What if I told you that you could make a 'healthier' version of brownies, with more protein and fibre, but it still would taste amazing... if not better?

Well... I bring to you my brownie recipe. So deep, dark, fudgy and chocolaty, you'll never guess, or taste the secret ingredient! And it is...

Black beans!!!!

So these cans were at a discounted price at the supermarket, and I thought I could have a go at making black bean brownies. The end result is to die for!

So here is the recipe...

Ingredients:

  • 400g can of black beans (drained and rinsed well)

  • 3 tsp cocoa powder

  • 1/2 cup rolled oats

  • 1/2 cup wholemeal flour

  • 1 medium egg

  • pinch of salt

  • 1/3 cup honey

  • 1 tsp stevia

  • 1/4 cup melted Nuttelex spread

  • 1 & 1/2 tsp vanilla extract

  • 3/4 tsp baking powder

  • 100g 70% cocoa dark chocolate (smashed to small pieces)

Method:

  1. Pre-heat oven to 180 degrees C

  2. Line a 8x8 pan with baking paper

  3. Blend all ingredients, except dark chocolate, in a high-powered food processor

  4. Process ingredients really well until the mixture and smooth, fluffy and moist

  5. Stir in the dark chocolate pieces and pour the mixture in the lined pan, and sprinkle a few more chocolate pieces on top.

6. Bake for 15-20 minutes or until skewer comes out clean. You should see a chocolatey, gooey goodness!

7. Let cool for 5-10 minutes.

Serve and enjoy!
