Grab n' Go Breakfast Ideas + RECIPE: Broccoli & Feta Muffins
Life is always just so busy, especially at this time of year - so grab n’ go breakfasts are the ultimate brekkie choice for many. So many of my clients just can't prioritise breakfast, and I can totally understand why. But the good news is I am always looking for ways to make eating breakfast an easy, fuss-free meal, that people can enjoy every day.
So today is your lucky day if you're ready this. If you don't have time for making breakfast and you need some easy brekkie inspo, here are some awesome breakfast ideas for you:
Make a whole batch of overnight oats that will last you a whole week
Nothing is easier than overnight oats, that you can make into a 'bircher muesli'. Here's what you can do:
Mix 3 cup of rolled oats, with 4 cups of milk of your choice into a bowl.
Then add a handful of nuts and seeds (such as almonds, walnuts, chia and flax seeds), together with a couple of handfuls of berries (fresh or frozen), OR fruit of your choice.
If you like things sweet, you can add a tsp of honey.
Give everything a good mix, cover the bowl and put it in the fridge (at home or at work).
Scoop yourself 2 Tb of the overnight oats in the morning and serve with some Greek Yoghurt, & ta da! You don't have to worry about breakfast for the WHOLE week.

Feta and Broccoli Muffins
Time: 30 mins
1/2 C rolled oats
2 cups of washed broccoli florets
1 cup of crumbled feta
Pinch of salt and pepper
1 Tb of extra virgin olive oil
Olive oil cooking spray to grease the muffin tins
Preheat the oven to 180 deg C and thoroughly grease the muffin tins (bottom & sides)
Rough chop the broccoli florets into smaller chunks
In a bowl, place the chopped broccoli florets in with the eggs, oats, feta cheese, salt and pepper and the extra virgin olive oil. Mix it all up.
Distribute the mixture into each greased muffin tin
Bake for about 20-25 mins or until the muffins rise & the edges are slightly brown.
Then, take them out, let them cool and enjoy!!!
*These freeze really well, so if you want to make a bigger batch to last you the whole week - go for it!
