Apple Crumble: Healthy enough for breakfast!

Does anything warm the soul like a home-made apple crumble? So what if you wanted to eat it for breakfast? This recipe is the perfect 'dessert for breakfast' idea! It's high in fibre, low in sugar and low in GI.

I love it how the whole house gets filled with the sweet aromas of vanilla and spice. I love to use red pink lady apples or golden delicious apples as they are naturally sweet so you don't have to add any sugar.

Healthy Apple Crumble

Preparation time: 10 mins

Cooking time: 40 mins

Serves: 12

Ingredients:

  • 6 Pink Lady apples

  • 1 cup almond meal

  • 2/3 cup shredded coconut

  • 1/2 cup rolled oats

  • 1/2 cup dates, pitted and chopped finely

  • 1 tablespoon ground cinnamon

  • 1/4 C walnut halves, chopped

  • 2 tablespoons coconut (melted) or olive oil

  • 2 teaspoons vanilla essence

  • 1 teaspoon ground cinnamon, extra

How to:

  1. Preheat the oven to 160C

  2. Peel and core apples, then dice into approx. 2 cm cubes. Place apples with 1/2 cup of water into a microwave safe dish, cover with a microwave safe lid and zap for 3 minutes or until apples are tender.

  • ​If you are not a microwave person, place apples into a saucepan and cover with boiling water. Simmer on low to medium heat for approximately 5 mins until apples are tender but not mushy.

  1. To make the crumble mix: combine almond meal, coconut, rolled oats, dates, cinnamon, walnuts, oil and vanilla essence in a separate bowl. Mix together until all the mixture is moist and crumbly.

  2. Drain apples well and gently toss through the extra cinnamon.

  3. Place the apples into a lined-oven proof dish and cover the apples evenly with the crumble mixture and bake for 40 minutes or until golden brown.

  4. To serve, add some natural Greek yoghurt and top with some fresh berries (optional)
